After cooking with rice, you get leftover rice easily. When you don’t have the plan to cook with rice in short time (1-2 days), you just store in a freezer storage and keep it in the freezer for a longer time. You can defrost the rice easily and this method applies to other food such as bread, rice cake, chocolate and so on. When you forget to store it and left it outside then the rice will get dry quickly. In this case, you just make some dumplings out of it like the Semmelknödle (bread dumpling), the idea is very similar so just try it instead of bread. The other day, I created a recipe with rice, #Recipe4Change and Bibimbap and have all these leftovers including sauces and salad.

You can recycle your leftover cooked rice and make completely new and creative dish. Just mix the rice with minced tofu, chopped spring onions, chives and egg. And then roll, make it in a ball shape and deep fry them! Good for the snack and go very well with any leftover sauce.

Ingredients
Rice Ball Dough
  • 1 bowl leftover cooked rice
  • 250 g tofu (minced meat is also good)
  • 3 tbsp finely chopped spring onions
  • 3 tbsp finely chopped chives
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper powder
  • dressing salad (any seasonal salad is fine)
Deep Frying
  • 3 tbsp flour
  • 1 egg
  • 3 tbsp breadcrumbs
Instructions
  1. Put all the ingredients in a bowl and mix them nicely.

  2. Make mouthful sized balls out of it.

  3. Roll them in flour, egg and breadcrumbs order and deep fry them.

  4. Serve with salad and sauces.

 

 

Behind the Kitchen

As I mentioned Semmelknödle (bread dumpling) earlier in this post, it has a similar story behind how it became one of the most common food in Central European and East European cuisine like the rice in most of the Asian cuisine. I am not so sure if it’s agreed with many people but one of my Austrian friends told me that semmelknödle is the best way to save dried the Semmel (basic breakfast bread). How great it is that there are many ways to save the leftovers. I will find out more and share many more international and creative recipes using leftovers such as this.  

 

Tips for Being Green

+ After deep frying, you can reuse the oil so just drain through a very fine sieve and keep it in a glass bottle. Or you can also make soap for washing laundry out of it. Here are some instructions I found online:
